Week 360 Menu

Hi everyone!  How was your weekend?  Mine was great; full of lots of activites, food and friends.  We had soccer, jazz band festival, fed the missionaries (I posted on instagram what I made), hosted a birthday party, yard work, wonderful time at church working with the primary kids, and a little relaxing this afternoon. 

 I took a break from posting on instagram for a while, but have posted a few times in the last few days.  It's my favorite way to share my favorite things with you all.  
I snapped this picture on Saturday evenings.  My daughter had a few friends over for a birthday party.  It was the easiest party ever.  All I did was provide food and my husband made a good fire in the firepit.  They roasted their own hot dogs.  Instead of birthday cake we had lots of smores options.  The kids had tons of fun and wished they could have stayed later to play more night games.  Can't wait for summer nights with late night fires and kids playing outside!  

This week's after school activities call for some major menu planning!  I'm excited for warm weather!  This week should be upper 80s.  Sheesh!  It's April, but I'll enjoy it.  

Monday:  honey garlic chicken (seriously so good and super fast to prep!) on angel hair/spaghetti squash, roasted broccoli

Tuesday:  enchiladas

Wednesday:  steak stir-fry and quinoa/rice

Thursday:  chicken taquitos and homemade salsa and quacamole (this is one of our go-to dinners to take to the baseball or soccer field and I make this salsa at least once or twice a week)

Friday:  sloppy joes

Saturday: broiled parmesan tilapia, simple orzo pilaf, veggies

Sunday:  easy night

All right!  Now off to the grocery store.  Bring on the week!  I've got dinner planned...that's the hard part.  :)  What are you making this week?  Feel free to share.  I love it when you do.

Chicken Angelo

Am I the only person that asks their friends what they're making for dinner all the time?  That's kind of why I started this blog, because I want to know what my friends are making for dinner. The other day I asked my friend, Juli (who is great cook), what she was making for dinner.  She told me she was making Chicken Angelo.   Then she told me what's in it.  I knew I had to try it too because she has some picky eaters at her house like I do.   I figured if they'll eat it then maybe it was worth a try at my house. This Chicken Angelo pasta has my favorite things, artichoke hearts and mushrooms in it.  But don't be fooled into thinking that my family likes these things too.  Because they don't.  They won't touch an artichoke or mushroom with a ten foot pole. The Best French Bread I've Ever Made

This is the best french bread I've ever made.  I got this recipe from my friend, Nikki, who gave us some of this bread as a thank you for my hubby helping them move a piano.  I remember it being delicious and we gobbled it up fast.  I was intimidated for some reason by the recipe and waited a few years before I made it. We needed some bread for to make some turkey, provolone, avocado sandwiches, so I made some of this bread and it was perfect!  We sliced one loaf like they do at Subway.  Then later I made normal shaped sandwiches with the rest of the bread.  Delicious... light and fluffy and yummy!
