Week 356 Menu: Happy Easter!

Happy Easter this week!  This comic gave me a little chuckle.  i still need to buy candy for a our family Easter Egg hunt.  Easter is one of my favorite holidays!  We watched this video as a family on Monday night.  I'm thankful for a special season to remember that there is life after death.  #hallelujah   I'm a little slow posting my menu this week.  I've been doing pretty great at spending less time on my phone and on the computer on social media later.  I had my husband put an appblock on my internet explorer on my phone and I love it.  It's so nice to not be able to check things on the internet.  It's helping me break my phone addiction.  :) We have family in town and I'm loving having them here.  So, our week will be full of lots of good food and good company. Here's the menu for the week: Monday:  we had grilled Greek chicken, tzatsiki sauce on flatouts rosemary and olive oil bread Tuesda...

Lemon Pudding Cake

Do you have food memories?  I do.  It's a little scary how many times I remember what we ate during a special occasion and not remember much else.  I remember having this cake from my nephew's 1st birthday party six years ago.  I don't remember what we had for the birthday dinner, but I remember this cake.  I've been wanting to make it since that birthday six years ago. The recipe comes from my sister-in-law's mother-in-law, who we call Grandma Krantz because we see her often and she's so sweet to my kids.  It's a one of Grandma Krantz's favorite cakes and she was sweet to let me share it here on my blog. Let's talk about the cake.  It's a delicious two layer lemon cake, but the "frosting" is the best part.  I'm not a big frosting fan (the powdered sugar and butter kind), but this frosting is different.  Probably because it's not really frosting.  It's whipping cream and pudding beat together and it's light and ...

Friday Favorite ... Creme Filled Chocolate Cupcakes

Three years ago I posted my recipe for Creme Filled Chocolate Cupcakes that our a family favorite around Easter-time.  I'm giving the cupcakes a new, updated post with some better pictures and instructions.  You can see my first post here ...     My husband's family has a fun tradition of having a Easter picnic on the desert the day before Easter. Lots of family comes and meets at their "Eastering" picnic spot. The food always includes marinated grilled chicken/turkey (recipe to come), hamburgers, hot dogs, salads, etc. and if you're lucky there will be some of these cupcakes too.      Aunt Shaunna is the one that would make these fabulous cupcakes. I'm still trying to perfect the art of piping the creme filling into the center.      I tell my kids that these are "surprise" cupcakes, because it will be a surprise how much filling there is inside. You never know until you take a bite.   Creme...

Easter Bunny Rolls

I wanted to share with you these cute little bunny rolls that I made for our Easter dinner.  I know Easter is already over, but you should make these for your kids (to celebrate spring or something).  They'll love them! I used my cloud light crescent roll recipe , which is my favorite "special occasion roll recipe".  It's great because you mix the dough up, shape the rolls, then let them rise until you're ready to bake.  They are really fluffy and delicious!  And easy! Cloud Light "Bunny" Crescent Rolls Printable Recipe Ingredients 4 1/2 tsp. (2 packages) yeast 1 1/4 c. water 1/2 c. sugar 1/2 c. vegetable oil 3 eggs, beaten 2 tsp. salt 4 1/2 c. flour Directions In Kitchenaid mixing bowl, dissolve yeast into 1 1/4 c. warm water, 1/2 c. sugar, 1/2 c. oil.  Mix together and let stand for 10 minutes until yeast is bubbly.  Mix in beaten eggs. ...

Random Thoughts

Hi everyone, Just wanted to share a few random things with you... Let's talk about photobooks...do you make them?  I usually make one once a year that recaps our family's highlights.  Shutterfly is having a promotion that ends today where you get a free 8x8 hardcover photobook (20 pages, regularly $29.99).  Just use the code MYBOOK and you only have to pay about $9 in shipping.  I spent hours yesterday making one.  Do you make your books through Shutterfly or somewhere else?  Have you ever made your family blog into a book?  I've been meaning to do that, but I have been blogging for years and am afraid of how much it might cost to print it out.  Are your ready for Easter?  I can't wait to make these creme filled chocolate cupcakes .  Wow, my little girl has grown up so much.  This was taken three years ago. I'll make some of this mandarin orange jello salad .  My kids love it!  I'll probably make some b...

Easter Favorites

It seems like I write this same post every year since I started my blog, but I just can't help it.  Every year I want to share with you my favorite Easter picnic food, even though I've shared it before.  It was a tradition in my husband's family to have an Easter picnic on the desert each year on the Saturday before Easter.  We've continued this tradition even though we don't live by family anymore.  Our Easter picnic usually includes these favorites... Creme Filled Chocolate Cupcakes   Grilled 7up Marinated Chicken grilled hamburgers and hot dogs, but our favorite are Teriyaki Burgers   Mandarin Orange Jello And with Easter dinner on Sunday we have Bunny Tail Rolls Have a Happy Easter!

Mandarin Orange Jello Salad

This jello salad is perfect for any potluck or family get-together.  I like to make it around Easter time. It doesn't last long.  My family loves it! Mandarin Orange Jello Salad recipe from my sweet mom  1 lg. pkg orange jello 2 c. hot water 1 sm. can frozen orange juice concentrate (or if you can't find a small can, just use half of a normal size can) 1 pkg. Dream Whip (or you can substitute a small container of cool whip, thawed) 1 sm. can mandarin oranges Dissolve jello in hot water. Add orange juice concentrate. Let set in fridge until partially firm. Prepare the Dream Whip according to package directions in mixer. Add the partially-set jello mixture and mix.  (If you let the jello set too long like I always do, don't worry, just mix it up really well.).   Fold in the oranges.  Pour into serving bowl or jello pan and let set in fridge until firm.

Week 130 Menu

I just found a post from last year with this picture of these cute bunny rolls that I made for Easter dinner last year.  I think we'll be making them again next year.  Here's the link to the original recipe. I love Easter!  It is one of the holidays where we have traditions that we do every year.  This is my hubby and my tenth Easter together and we've had an "Easter picnic" every year with the same food, sometimes with extended family and sometimes by ourselves.  Looks like this year we'll be without visitors (unless someone wants to come and visit). :) Here's what I'm making this week: Monday:  grilled spicy honey chicken  w/salad with baked tortilla strips and homemade ranch dressing Tuesday:   crockpot ranch pork chops w/mashed potatoes Wednesday: something Mexican-ish, tacos or something in a tortilla Thursday:  spaghetti Friday: chicken caesar pizza Saturday:  Our traditional day before Easter picnic -- marinated ch...

Creme Filled Chocolate Cupcakes

My husband's family has a fun tradition of having a Easter picnic on the desert the day before Easter.  Lots of family comes and meets at their "Eastering" picnic spot.  The food always includes marinated grilled chicken/turkey (recipe to come), hamburgers, hot dogs, salads, etc. and if you're lucky there will be some of these cupcakes too. We had our own Easter picnic a few weeks ago with my in-laws, but we were missing a few things:  sand in our food, a nice sunburn, lots of cousins and family, and these cupcakes.  My hubby asked if I could make some cupcakes, so I did yesterday.  We had an early birthday celebration for my now six year old, since Grandma and Grandpa had to go home before her birthday later that week. Creme Filled Chocolate Cupcakes recipe from Aunt Shaunna Chocolate cupcakes, baked and cooled ( made from scratch if you're ambitious or from a cake mix if you're like me) Creme Filling (this recipe is for 2 boxes of cupcakes, so you...

Week 78 Menu and Happy Easter

Happy Easter everyone!  Look at these cute bunny tail (or bunny head) rolls that we with our Easter dinner.  They were fun to make and fun to eat.  I found the recipe here .   This week has been a fun one:  Spring Break for the kiddos, my hubby took the week off from work and my in-laws were in town.  I've spent a lot of time in the kitchen whipping up lots of food.  It's nice having someone to entertain the kids while I cook.  But alas, that will end tomorrow and we're back to normal life again, except that soccer starts tomorrow, so our days will be even busier.  And honestly, I don't really feel like cooking anything anytime soon, so we'll see what this week brings. Here's my menu for this week: Monday:  chicken cordon bleu w/rice Tuesday:  PW's BBQ meatballs w/mashed potatoes Wednesday:  spaghetti Thursday: breakfast for dinner Friday: 6 year old birthday girl dinner, so TBD Saturday: chicken quinoa ste...
