Hey there! I'm letting it go that I didn't post my menus for the last two weeks. I'm just going to enjoy the last two weeks of summer break.
I've been spending a lot of time trying to keep up with the bounty that we pick from our garden. I've been freezing corn and peppers, roasting Anaheim chiles, canning tomatoes, making salsa, eating a lot of veggies and trying to find homes for the multitude of cucumbers I pick every day.
I'm just going to cut to the chase and get my menu planned while it's still early Monday morning.
Monday: going to a BBQ and taking this Bacon, Corn, Tomato Pasta salad
Tuesday: my family's choice and maybe some birthday cake
Wednesday: taco soup
Thursday: yogurt parmesan chicken strips, fries and garden veggies
Saturday: honey lime enchiladas
Sunday: skinny chicken cordon bleu meatballs
