This is my favorite recipe for taco soup. I have been making it for over five years now and haven't found a recipe that I like better. I posted this recipe along with my menu #8 back in 2008, but I thought this recipe was so good that it deserved another post.
My Favorite Taco Soup

Ingredients
In Dutch oven, brown meat, onion, bell pepper, and garlic. Then add everything else. Simmer about 30 minutes (or cook in a slow cooker 3 -4 hours on high or low 8 hours). Serve with toppings.
Toppings:
sour cream
shredded cheddar cheese
tortilla chips
- 2 lbs ground beef (we like ground turkey best and use 1 lb)
- 2 - 3 cloves garlic, minced
- 1 onion, chopped
- 1 green pepper, seeded and chopped
- 1 can kidney beans, drained and rinsed
- 1 can pinto beans, drained and rinsed
- 1 can corn or hominy (I like white corn)
- 1 small can green chilies
- 1 can Mexican style diced tomatoes
- 1 can Rotel
- 1 pkg taco seasoning or use 1 T. homemade taco seasoning
- 1 pkg ranch dressing mix
- 1 - 2 c. water (make it as thin or thick as you like)
- chili powder to taste
