Hi everyone! Happy Monday! Can you believe that this week we'll be halfway through March already. Whoa, I wish time would slow down a bit. And, don't you love daylight savings time? I had to take my boys to school today, so they could sleep in a little longer. Tomorrow might be a little rough.
I tried a few new recipes last week and thought I'd share what I thought. I made some Mexican chopped salad with cilantro-lime vinaigrette and liked it. I even bought jicama for the first time ever. My mom used to buy it when I was little but I hadn't eaten it in years.
Yesterday we had some teenage girls from church over for dinner. The theme of the dinner was supposed to be a country, so we did Sweden, since my husband served a mission there. I made Swedish meatballs and then at the last minute whipped up this Swedish apple cake with vanilla sauce. It turned out to be pretty yummy, but my kitchen was a giant mess afterwards. I am not good at cleaning up as I go especially when I'm in a rush.

Menu time for this week:
Monday: chicken stir fry
Tuesday: naan pizzas
Wednesday: breakfast for dinner
Thursday: grill hot dogs and maybe a rainbow fruit tray (or maybe just some rolos at the bottom of a quickly drawn rainbow picture like last year)
Friday: breakfast burritos
Saturday: grilled Greek chicken with tzatziki sauce, veggies and grilled naan
