Mini Cheesecakes

Sunday I had a craving for cheesecake, but I didn't want to make my usual recipe because it makes a ton.  I need to have less treats around since I'm trying to eat them less often.  I used this recipe to make these mini cheesecakes.  It made 12 pretty short cheesecakes.  You could make less crust and make fewer cheesecakes that have more of the "cheese" part.


Mini Cheesecakes
recipe in my recipe binder (original recipe for cherry cheesecake tarts) who knows where I got it

Crust:
1 c. crushed graham crackers
1/8 c. sugar
4 T. melted butter

Mix together cracker crumbs and sugar.  Add butter.  Pat into the bottom of greased muffin cups (I used these silicone ones) or you can use a paper liner.

Filling:

8 oz package cream cheese (I used fat-free)
1/4 c. sugar
1 egg
1/2 tsp. lemon juice
1/2 tsp. vanilla

Cream together cream cheese and sugar.  Add egg, lemon juice and vanilla.  Beat until smooth.  Spoon onto crust in muffin cups.

Bake at 350 for 30 minutes.  Chill before serving.  Makes 12 mini cheesecakes.

Chicken Angelo

The other day I asked my friend, Juli (who is great cook), what she was making for dinner.  She told me she was making Chicken Angelo.   Then she told me what's in it.  I knew I had to try it too because she has some picky eaters at her house like I do.   I figured if they'll eat it then maybe it was worth a try at my house. The Best French Bread I've Ever Made

This is the best french bread I've ever made.  I got this recipe from my friend, Nikki, who gave us some of this bread as a thank you for my hubby helping them move a piano.  I remember it being delicious and we gobbled it up fast.  I was intimidated for some reason by the recipe and waited a few years before I made it. We needed some bread for to make some turkey, provolone, avocado sandwiches, so I made some of this bread and it was perfect!  We sliced one loaf like they do at Subway.  Then later I made normal shaped sandwiches with the rest of the bread.  Delicious... light and fluffy and yummy!
