Week 105 Menu

I made my favorite cheesecake for my hubby's birthday today.  I posted the recipe a few years ago, but I updated the recipe with new pictures (since the old ones were awful!).  This is my favorite cheesecake recipe ever.  I highly recommend it! Now onto my menu for the week: Monday: tinfoil dinners Tuesday: broiled parmesan tilapia , rice Wednesday: meatball sandwiches Thursday: Italian wedding soup or easy night Friday: sloppy joes or teriyaki burgers Saturday: maybe make spicy honey chicken again Sunday:  lasagna, 1 hour breadsticks , salad That's what I'm making this week.  What are you making?  I love it when you share.  Have a good week!

Cheesecake Bars

I tried these Cheesecake Bars that I saw on the Sisters' Cafe today.  They were yummy and pretty easy to make.  If you've got a craving for cheesecake, you should give these a try.

Mini Cheesecakes

Sunday I had a craving for cheesecake, but I didn't want to make my usual recipe because it makes a ton.  I need to have less treats around since I'm trying to eat them less often.  I used this recipe to make these mini cheesecakes.  It made 12 pretty short cheesecakes.  You could make less crust and make fewer cheesecakes that have more of the "cheese" part. My FAVORITE Cheesecake

This is my favorite recipe for cheesecake.  I've been making it ever since my older sister got married (12 years ago).  I make it every year for my hubby's birthday.  The kids love it too.  Cheesecake 2 - 8 oz pkgs cream cheese (I use fat-free) 2 - 3 oz pkgs cream cheese 1 c. sugar 4 eggs 2 tsp. vanilla Cream cream cheese and sugar. Add eggs one at a time and vanilla. Mix well. Pour onto graham cracker crust (either use 2 9" pans or one springform pan). Bake at 325 for 25-35 minutes, until the middle barely jiggles. Mix 1 pint sour cream and 1/2 c. sugar. ( I usually use 1/2 pint and 1/4 c. sugar -- my preference.) Whip and spread on top of cheesecake. Bake 5 more minutes. Refrigerate for 6 - 8 hours before serving.
