I made these for book group. All I can say is, "Yum! I love all things pumpkin!" And I love cheesecake. And I love them together.
Pumpkin Cheesecake Bars
I got this recipe from my sister-in-law, Annelisa
Pound cake mix
3 eggs
2 T. butter, melted
4 tsp. pumpkin pie spice
1-8 oz cream cheese (I used fat-free)
1-14 0z. can sweetened condensed milk (I used fat-free)
2c. canned pumpkin
1/2 tsp. salt
1c. chopped nuts, optional
whipped cream, optional
Combine cake mix, 1 egg, butter and 2 tsp. pumpkin pie spice until crumbly. Press into 9x13 pan. Beat cream cheese until fluffy. Beat in milk and remaining eggs, spice, pumpkin and salt. Pour over crust and sprinkle with nuts. Bake at 350 degrees for 30-35 minutes. Let cool completely and the refrigerate.
