10 Minute Meal: French Dip Pitas

My family loves french dip sandwiches.  We often have perfect pot roast for Sunday dinner, since my dad has keeps us supplied with beef from his "hobby" farm.  I've made a few variations over the years.   French dip rolls that have the meat baked inside the rolls, which are perfect for kids to eat, and also Quick French dip sandwiches . However, since I discovered this way to make french dip pitas, it's the only way we've been eating them for the last year.  They can be made start to finish in 10 minutes, which is perfect for busy school nights.  They also travel well and can be eaten on the sidelines of soccer games. Pita pockets are split open and stuffed with roast beef, a slice of cheese and a sprinkle of green chiles.  While the pita pockets are warming under the broiler, I mix up a quick au jus (or juice as my family calls it).  The pita pockets get kind of crispy and perfect to dip in the juice.  The cheese melts over the roast bee...

Chicken Salad BLT

This is my new favorite sandwich!  I've made it for me and my hubby for lunch after church the last couple of weeks.  It's inspired by a sandwich that I had at our local eating establishment, Hill Diner. I love BLTS and I love chicken salad sandwiches, so why not combine them?  The chicken salad in this sandwich can be as simple or as gourmet as you feel like making.  I think it's the bacon that makes so yummy! Sorry that there aren't really any exact amounts in the "recipe".  I guess I assume that if you can cook, and if you regularly check my blog, that you're like me and just add a scoop of this and a little of that according to your taste. Quick French Dip with Green Chilies

I saw my friend, Julia's recipe for Hot Roast Beef Sandwiches with Dip on her blog, Neighbor Julia, and knew that I had to try them.  We've had them a few times since then.  Yummy.  Fast.  And so easy!   My daughter loved this so much that she took the sandwich that I'd saved for my lunch the next day to school for lunch.  Even my five year old boy liked these (without the green chile). This is my version of Julia's yummy sandwiches.   Quick French Dip with Green Chilies rolls (I love bolillo rolls from Walmart, but any crusty roll will work) thinly sliced roast beef provolone cheese green chile Au Jus sauce (recipe below) Cut rolls lengthwise, but not all the way through.  Layer roast beef, provolone cheese, and top with green chile. The Best French Bread I've Ever Made

This is the best french bread I've ever made.  I got this recipe from my friend, Nikki, who gave us some of this bread as a thank you for my hubby helping them move a piano.  I remember it being delicious and we gobbled it up fast.  I was intimidated for some reason by the recipe and waited a few years before I made it. We needed some bread for to make some turkey, provolone, avocado sandwiches, so I made some of this bread and it was perfect!  We sliced one loaf like they do at Subway.  Then later I made normal shaped sandwiches with the rest of the bread.  Delicious... light and fluffy and yummy! Week 106 Menu

This is one of my all-time favorite lunches:  a green chili cheese bagel.  My local Smith's makes the best green chili bagels.  Add some mayo, mustard, cheese, ham, cucumbers, spinach or lettuce, then enjoy!  Now onto my menu for the week: Monday: taco soup Tuesday: crockpot chicken stroganoff w/whole wheat egg noodles Wednesday: Chicken Teriyaki Fried Rice Thursday: Honey Pecan Chicken Friday: downtown trick-or treating, maybe mummy hot dogs Saturday:  ward trunk-or-treat (chili) Sunday: Italian meatball soup Extra meal just in case:  Southwestern BBQ Chicken Salad Looks like my menu is a little heavy on the chicken, but oh well, at least it's all planned.  If you've planned your Halloween Week menu , please share. Turkey Meatballs and the best meatball sandwich!

These are my favorite! This recipe if from my SIL Melinda. When she makes these she triples the recipe and has a whole freezer full of meatballs. My whole family loves them. We make them into meatball sandwiches or eat them with spaghetti. The kids gobble them up, especially in meatball sandwiches. Turkey Meatballs 2 lbs ground turkey 2 pieces of bread (to make breadcrumbs) 1 onion 1 green pepper 2 cloves garlic 1 carrot 1 egg 1 Tbsp Italian seasoning, crushed in the palm of your hand 1 Tbsp grill seasoning or 1 tsp salt and 1/2 tsp black pepper 2 Tbsp Worcestershire sauce 1 Tbsp red wine vinegar or balsamic vinegar 1. Heat oven to 375 degrees 2. Whirl bread in blender or food processor to make soft bread crumbs 3. Coarsely chop all vegetables and place in food processor. Process until finely chopped, or finely chop all vegetables by hand. 4. In a large mixing bowl combine all ingredients. Mix with hands. Mix as little as possible to keep meatballs from being too ...
