Scotcharoos

Have you ever had a scotcharoo?  They are peanut buttery, chocolatey with a hint of butterscotch, chewy and delicious! Scotcharoos are super easy, no-bake dessert to make.  Even your kids could make them...with a little help. I might need to warn you that they are dangerously addictive, so these are perfect to take to a party or a potluck.  Everyone will love you!  And you'll be glad that you didn't eat the whole cookie sheet worth yourself.  (Even though that would be delicious!) Scotcharoos Yield: 12x17 pan (cookie sheet) - cut into bars as big or as small as you'd like 1/2 c. butter 1 c. sugar 1 c. light corn syrup 1 c. peanut butter 8 c. (or more) rice krispies 6 oz. chocolate chips 6 oz. butterscotch chips Cooking Directions Melt butter in sauce pan. Add corn syrup and sugar. Bring just to a boil and remove from heat. My Favorite Peanut Butter Chocolate Chip Cookies

These peanut butter chocolate chips are one of my favorite recipes.  One of my roommates my first year of college made these for me.  Actually, I don't know if we baked many of these cookies, or just ate the dough in the wee hours of the morning when we should have been sleeping.    The first time that I ate one of these cookies, I thought, "Wow!  Where have these cookies been all of my life?  They are perfect!"  And I've been making them ever since (14 years later!).   They are even better made with a combination of peanut butter chips, chocolate chips and white chocolate chips.  I only had chocolate chips on hand, so that's what I used. I posted a recipe for a " healthier" version back in the early days of my blog .  Those were the days when I substituted applesauce for some of the butter and used more wheat flour in my cookies.  I still try to cook healthy, but I don't substitute things as often as I used too.  I...

Peanut Butter Cookies

I've made a lot of peanut butter cookies in my life.  My favorite recipe is my Grandma's recipe that I made all the time growing up.  Perfectly soft and peanut-buttery.       Peanut Butter Cookies print the recipe Yield: about 2 dozen   Ingredients 1/2 c. butter (original recipe called for shortening) 1/2 c. peanut butter 1/2 c. brown sugar 1/2 c. granulated sugar 1 egg 1/2 tsp. vanilla 1 tsp. baking soda 1 1/2 c. flour 1/4 tsp. salt Directions Cream butter and peanut butter together. Add sugar, beaten egg and vanilla. Sift flour, soda, and salt together and add to butter mixture.               Form dough into small balls and place on greased cookie sheet about 1" apart.   ...

I just saw my friend, Megan, at the grocery store this morning.  She reminded me that today is National Peanut Butter day.  I thought I'd share with you a few of my favorite peanut butter treats... Poppy Chow

My kids love muddy buddies (aka. monkey munch or whatever you call it at your house). A few years ago we discovered the muddy buddy popcorn version, called Poppy Chow, on Tasty Kitchen. I blogged about it a few years ago, but didn't include the picture or recipe, so I thought I'd give it it's own, new post. Poppy Chow recipe from Tasty Kitchen and Two Peas and their Pod 9 cups Air-Popped Popcorn (unpopped kernels removed) 1 cup Semi-Sweet Chocolate Chips ½ cups Natural Peanut Butter 4 T. Butter ( I used 2 T.) 1 teaspoon Vanilla Extract 1-½ cup Powdered Sugar In microwave or double boiler, melt chocolate, peanut butter, and butter until melted. Stir in vanilla. Place the popped popcorn in a large bowl and pour the chocolate mixture over all. Stir until evenly coated. Add the powdered sugar and stir until each piece is covered. Spread out on cookie sheets to set the chocolate or refrigerate if you're in a hurry to eat it.

Peanut Butter Granola Balls

I saw this recipe on Two Peas and Their Pod the other day and knew that my kids would love them.  I whipped them up yesterday before we headed to the pool for the morning.  There weren't any left by the end of the day.  Yum! Peanut Butter Granola Balls recipe from Martha Stewart and found on  Two Peas and Their Pod 1/3 c. honey 1/4 c. natural peanut butter 2 T. unsalted butter 1 c. crisp rice cereal 1 c. old-fashioned rolled oats 1/4 c. dried craisins or raisins 1/4 c. chocolate chips In a small saucepan over medium, heat honey, peanut butter, and butter.  Stir until smooth, 1 to 2 minutes. Remove from heat, stir in cereal, oats, and dried fruit.  Let cool for a minute, then mix in chocolate chips. Drop mixture by the tablespoon into mini paper cupcake liners or on wax paper lined cookie sheet.  Refrigerate until set, about 15 minutes.

Peanut Butter Heart Bars

Happy Valentine's Day everyone !  To celebrate, I made these fabulous peanut butter bars.  Actually, I made them yesterday and I just remembered I forgot to put them in my daughter and hubby's lunches.  Oops!  Hopefully I don't eat them before they get home from. These are one of my favorite bar cookies to make ever.  It's a good idea to make these to share with lots of people, so you don't eat the whole pan by yourself.   Have a great day and don't forget to post your menus for the week (because I LOVE THEM )! Peanut Butter Bars 1/2 c. butter (I use 6 T. butter, 2 T. applesauce) 1/2 c. peanut butter 1/2 c. white sugar 1/2 c. brown sugar 1 egg 1/2 tsp. vanilla 1/2 tsp. soda 1/4 tsp. salt 1 c. flour (plus a little more if needed) 1 c. oats Press in bottom of a 9 x 13 pan. Peanut Butter Cup Brownies

I made these peanut butter cup brownies the other day using my new whisk.  It was fun whisking in lots of peanut butter and chocolate.  These brownies and yummy, but very, very rich.  So, whip up a batch, cut them in little squares and share them with your friends and family. Magic Peanut Butter Middle Cookies

I found this recipe on This Week for Dinner who found it somewhere else, who found it somewhere else, etc., so I thought it would be okay to post the actual recipe on my blog too.  I made these cookies tonight since we were feeding the missionaries.  They disappeared pretty fast (the cookies, not the missionaries).  Even though I vowed last weekend that I wouldn't turn the oven on this summer, these cookies were worth heating up the kitchen. Banana Peanut Butter Cup Cookies

I made these cookies tonight (I know I just made pb cookies the other night, but oh well) and they are yummy! And they aren't super bad for you either. Check out the recipe here at Picky Palate. **I didn't use 10 peanut butter cups, like it calls for. I only had two that I chopped up, then I added a few mini chocolate chips and peanut butter chips. It worked out great. Yum!

A Little Bit Healthier Peanut Butter Chocolate Chip Cookies

I know that peanut butter cookies aren't supposed to be good for you, but I made some last night and tried to make them not quite so bad for you. Healthier Peanut Butter Chocolate Chip Cookies recipe by Jenny 6 T. butter, softened 1/3 c. peanut butter (I like Skippy Natural Creamy) 2 T. applesauce 1/2 c. sugar 1/3 c. brown sugar 1 egg 1 tsp. vanilla 1 tsp. baking soda 1/4 tsp. salt 3/4 c. whole wheat flour 3/4 c. white flour 1/2 c. oats 1/2 c. (or more) peanut butter chips, chocolate chips or white chocolate chips Cream butters, applesauce, and sugars together. Add egg and vanilla. Add dry ingredients. May need to add more flour to make a good dough. Form dough into small balls. Bake at 350 for 10 minutes.
