Week 379 Menu

Happy Monday everyone!  

This week feels totally different than last week.  Last week we were scrambling to paint and replace trim, etc. in two of my kids rooms.  My house was pretty much a mess and I was trying to get everything done enough to put the kids (and their stuff) back into their rooms before Grandma and Grandpa came to visit.  We made it, but still have tons of trim touchup, caulking, etc. but the worst parts are done.  I love how it looks.  

I've posted a few pictures on instagram, but here's one of my daughter's room.  We took out her carpet to reveal these perfect wood floors.  They match the other wood floors in my house and are in perfect shape.  I'm excited to go rug shopping.  (And we still have baseboards to put up and closet doors and the list goes on and on...)

Yesterday was the quietest day that I've had in years.  My whole family went with my inlaws to celebrate my husband's grandpa's 92nd birthday with him.  I didn't go with them because we were having our first practice for our big children's presentation in church (that is in two weeks).  So, I had the whole day all by myself.  My house stayed clean.  I didn't do any housework (since it was Sunday).  I didn't have to make any food or do any dishes.  It was very relaxing and quiet and nice to just be me.  I was glad when my family came home though.   

We are lucky and get to have my father-in-law staying with us this week.  We have our regular busy schedule, so I thought I'd better menu plan so we don't end up with oatmeal for dinner (although he'd be totally cool with that).  

So, here's the plan...

Monday:  honey balsamic BBQ chicken sandwiches, coleslaw, strawberries

Tuesday:  grilled Greek chicken, grilled veggies, rosemary flatbread, tzatsiki sauce

Wednesday:  salisbury steak meatballs, egg noodles, veggies

Thursday:  individual chicken pot pies, big green salad

Friday: orange chicken (my kids favorite meal OF ALL time), rice and/or quinoa, broccoli

Saturday:  lasagna, macaroni grill rosemary bread

Sunday:  lime and coconut chicken, twice baked potatoes

One Hour Rolls

These rolls are amazing!  I've been making these rolls since 2001 when I was a newlywed and my sister-in-law shared the recipe with me.  The rolls are light, fluffy, easy to make and they only take one hour!  And delicious too!   I've made these rolls more times than I can count, so I've perfected the art of making them.  Here are some step-by-step instructions with pictures for you. Here's what you'll need.  I buy pretty much all of the ingredients in this recipe at Sam's club, thus the huge containers.  You need warm water, yeast, oil, sugar, salt, egg and flour. In the mixer bowl, add warm water (not hot), oil, sugar and yeast.  Mix together. After ten or fifteen minutes the yeast mixture should be puffed up like this.  Time to add the salt and beaten egg. Chicken Angelo

Am I the only person that asks their friends what they're making for dinner all the time?  That's kind of why I started this blog, because I want to know what my friends are making for dinner. The other day I asked my friend, Juli (who is great cook), what she was making for dinner.  She told me she was making Chicken Angelo.   Then she told me what's in it.  I knew I had to try it too because she has some picky eaters at her house like I do.   I figured if they'll eat it then maybe it was worth a try at my house. This Chicken Angelo pasta has my favorite things, artichoke hearts and mushrooms in it.  But don't be fooled into thinking that my family likes these things too.  Because they don't.  They won't touch an artichoke or mushroom with a ten foot pole. Week 394 Menu

Hi there!  This week is flying by!  So excited that we've been having blue skies and warmer weather.  Our snow is almost all melted and little bulbs are sprouting in the flower beds.  However, we had our 10th snow/ice day last week!!!  Hopefully it was the last one. Life has been busy, busy and I need to plan out the rest of our week's menus, even though it's already Thursday.  Here's what we've eaten so far and what I'm planning: Monday:  chicken stirfry, rice/quinoa Tuesday: breakfast for dinner Wednesday: flatbread pizzas Thursday:  roasted butternut squash, pasta, chicken sausage Friday: tacos Saturday: leftovers Sunday: pot roast, mashed potatoes, one hour rolls Alrighty, that's what we're eating this week.  How about you?  What's on your menu this week?  Feel free to share.  I love it when you do!
