Summer Favorite - Southwest Pasta Salad

Yesterday I made this Southwest Pasta Salad from Our Best Bites.  It's in their Savoring the Seasons cookbook and also on their blog

I loved it.  It was the perfect summer dinner.  I grilled some chicken that I'd marinated with fajita seasonings.  Then I tossed the chicken in with some pasta along with grilled corn, black beans, tomatoes, bell peppers, green onions, avocados and lime zest and a tasty cilantro-lime dressing. 

This would be perfect for a potluck, or an easy make-ahead dinner.  Delicious!  Summer in a bowl.

Side note...if I were to take this to a potluck, I would double the amount of pasta.  I only used a half of the dressing recipe for 1/2 lb. pasta.
