I felt like making pesto pasts for dinner last week. However I didn't have a specific recipe in mind and I hadn't gone grocery shopping. I just used what I had in my fridge and freezer. It turned out really yummy, easy, and quick. The perfect summer-time meal. I used Pioneer Woman's Pasta with Pesto Cream Sauce recipe for inspiration.

Quick Pesto Pasta with Chicken and Veggies
2. Chicken -- I grilled up some sliced chicken that I'd frozen in caesar dressing). It was really flavorful, since it had been soaking up the dressing for a while)
3. Pesto Sauce -- Melt 2 T. butter in sauce pan. Add a splash (1/4 c. or so) of cream, half and half, or evaporated milk (I used evap. milk). Add a spoonful or two of jarred pesto. Pour sauce over pasta. Top with freshly grated parmesan cheese.
4. Stirfry, boil or grill your favorite veggies. I had green beans and carrots on hand.
5. Enjoy!
