Happy 2012 everyone! We just got home last night from our 13 day trip to UT. We had a great time and stayed with a lot of fabulous people -- my parents and little sis, my inlaws, my sister-in-law and family, and one of my brother-in-law and family.
Now that we're home, it's a little overwhelming. The piles of Christmas gifts to find a place for, mail to go through, toys, laundry, emails, dishes, etc. And to top it off, my fridge is empty, so I have to go to the store today which means I have to plan my menu. So, here I am...
Tuesday: meatloaf, baked potatoes, green salad
Wednesday: minestrone soup, hot bread
Thursday: grilled teriyaki chicken (already marinating in my freezer), whole wheat couscous, steamed broccoli
Friday: ground beef tacos
Saturday: creamy chicken and wild rice soup
Sunday: fauxtisserie chicken, mashed or roasted potatoes, green salad
All righty...such a relief to have that done. One less thing to worry about. Now off to tackle the piles. As always, feel free to share what you're making this week.
