My sister-in-law, Melinda, gave me this recipe several years ago. She always gives me great recipes that I love (like turkey meatballs). I've never had anything made by her that I didn't love and get the recipe for.
This soup is delicious and very quick to make. I made it in the morning, set it in the fridge, then warmed up bowls of it at dinner time. So easy and yummy! The soup turned out thicker than normal, but I think it was because it had all day to soak up some of the extra broth and I also put in 13 oz. of tortellini instead of 9 oz. It was still yummy though!
Chicken Tortellini Soup
recipe from Melinda
3 (14.5 oz) cans chicken broth
1 can cream of chicken soup
1 c. cooked, chopped chicken
1 c. chopped onion
1 c. chopped carrots
1/2 c. water
1/2 tsp each: minced garlic
basil
oregano
9 oz. package cheese tortellini
10 oz. package frozen broccoli
Boil top ingredients in a large pot. Add cheese tortellini. Simmer uncovered for 30 minutes. Add thawed broccoli. Simmer 5-10 minutes or until broccoli is cooked.
