Week 115 Menu

Well, I'm back after a two week break.  My little brother got married on Tuesday, so we took a little Christmas Break vacation to Utah.  It was so great to see family.  It's the first time I've beeen together with all my siblings in over three years.  We got to spend a bit of time with my husband's family too. 

It was a nice break.  I didn't have to plan any menus or make any meals and I got to eat lots of yummy food.  But now I have huge piles of laundry to wash and lots to do, so I need to plan a few meals so I can go grocery shopping.  Here goes:

Thursday:  bistro chicken w/garlic mashed potatoes

Friday:  honey lime enchiladas

Saturday:  Swedish meatballs w/potatoes and IKEA gravy

Sunday:  crockpot beef cooked in a marinade w/rice and broccoli

Monday:  taco salad

Tuesday:  soup w/5 minute artisan bread

Wednesday:  grilled, marinated chicken and rice

  2. Okay, so it's already Friday...but this is like the first time in a month that I even had a menu or cooked so I'm posting it now! :-)Glad you guys had a good trip!

    W- Chicken Parmesan
    Th-Enchilada Casserole and salad
    F- Rice and bean taco skillet
    S- Chicken caeser salad
    S- Crock pot bbq ribs and cheesy potatoes
