Cinnamon Rolls
Yield: about 2 dozen
Ingredients
- 1 1/2 c. milk
- 1/3 c. butter
- 4 1/2 c. flour
- 1 tsp. salt
- 1/2 c. sugar
- 1 T. yeast
- 2 eggs, beaten
- Heat milk and butter to lukewarm and set aside. Combine flour, salt, sugar and yeast. Add eggs and milk and butter mixture. Mix well adding 1/2 c. more flour (or more if needed) to make a soft dough. Knead until elastic. Let rise until double.
- Divide in half. Roll in rectangle and cover with 3/4 c. sugar, 6 T. melted butter, 1 T. cinnamon (I've used less butter, like 4 T. and it's fine). Roll and cut into rolls. Let rise 1/2 hr. Bake at 350 degrees for 15-20 minutes.
- Mix together powdered sugar, a little vanilla and enough milk to make a glaze. Pour over warm cinnamon rolls.
I usually make these on Christmas Eve, and stick them in the fridge after forming them into rolls (without letting them rise more). While we're opening presents, I get the rolls out of the fridge and let them warm up and then bake them like normal.
