I saw this recipe on Dinners for a Year and Beyond a while ago and have been wanting to try it. I was multi-tasking like crazy during dinner tonight and decided to make these. Next time I'll watch them a little closer, so I don't burn them.
I haven't eaten garbanzo beans much in the past. Sometimes I throw them on my salad, but I don't really enjoy the beany texture. But I love them roasted. It totally changes the texture and makes them yummy and crispy.
These are perfect for snacking or for tossing in a salad.
recipe from Dinners for a Year and Beyond
1 can garbanzo beans, rinsed and drained
drizzle of olive oil (1 T.)
sprinkle of kosher salt
a little freshly ground pepper
Line cookie sheet with parchment paper. Spread beans on pan. Drizzle with olive oil and sprinkle with salt and pepper. Toss together. Bake at 425 for 35-45 minutes, stirring and checking often since they brown quickly towards the end of the cooking. Remove from pan and enjoy!
