Hi everyone! Happy Monday! I thought I'd actually post a recipe today since it's been a while. Things have been a little busy lately. I'll get to my menu after the recipe. These are chocolate chip cookies full of yummy ingredients like Honey Bunches of Oats, coconut, etc.

1/2 c. butter (I used 6 T. butter, 2 T. applesauce instead)
1/2 c. sugar
1/2 c. brown sugar
1 egg

1 c. flour
1/2 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. salt
1 c. rolled oats
1/2 c. coconut

1 c. cereal (Honey Bunches of Oats, bran flakes, corn flakes, whatever)
1/2 c. or more chocolate chips
Cream butter and sugar. Add egg and vanilla. Add flour, baking soda and powder. Add oats, coconut, cereal and chhocolate chips, but don't over mix.

Scoop onto cookie sheet and bake 8-10min at 350.

Monday: hamburgers, oven-baked potato chips
Tuesday: Chicken, cous cous and veggies
Wednesday: Crockpot ranch pork chops and potatoes
Thursday: Crockpot bisto chicken w/more potatoes
Friday: homemade pizza, maybe BBQ chicken
Saturday: tinfoil dinners
Sunday: try honey hoisin chicken w/rice
All right, there it is. A little heavy on the potatoes, but oh well. What's on your menu this week?
