Week 66 Menu and Rockin' Ranger Cookies

Hi everyone! Happy Monday! I thought I'd actually post a recipe today since it's been a while. Things have been a little busy lately. I'll get to my menu after the recipe. These are chocolate chip cookies full of yummy ingredients like Honey Bunches of Oats, coconut, etc.

Rockin' Ranger Cookies
recipe from a gal at church that I can't remember her name

1/2 c. butter (I used 6 T. butter, 2 T. applesauce instead)
1/2 c. sugar
1/2 c. brown sugar
1 egg
1/2 tsp. vanilla
1 c. flour
1/2 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. salt
1 c. rolled oats
1/2 c. coconut
1 c. cereal (Honey Bunches of Oats, bran flakes, corn flakes, whatever)
1/2 c. or more chocolate chips

Cream butter and sugar. Add egg and vanilla. Add flour, baking soda and powder. Add oats, coconut, cereal and chhocolate chips, but don't over mix.

Scoop onto cookie sheet and bake 8-10min at 350.


Now onto my menus for the week:

Monday: hamburgers, oven-baked potato chips

Tuesday: Chicken, cous cous and veggies

Wednesday: Crockpot ranch pork chops and potatoes

Thursday: Crockpot bisto chicken w/more potatoes

Friday: homemade pizza, maybe BBQ chicken

Saturday: tinfoil dinners

Sunday: try honey hoisin chicken w/rice

All right, there it is. A little heavy on the potatoes, but oh well. What's on your menu this week?

    Tuesday: Quesadillas w/avacados, Cilantro lime rice
    Wednesday: Sweet & Sour Meatballs, rice, veggies
    Thursday: Acorn Squash, quinoa salad
    Friday: Hamburgers (Brooklyn's request)
    Saturday: Leftovers
    Sunday: Pork Roast (didn't happen last week), roasted veggies, Pudding dessert
    Derek's going to be working a lot this week, so we'll see how often the menu turns into leftovers.

  2. Monday: probably leftover shepherd's pie or macaroni and cheese.

    Tuesday: Carne Asada Burritos with freshly homemade pico de gallo & guacamole.

    Wednesday: "Better Than Olive Garden Alfredo" with some broccoli and chicken tossed in

    Thursday: Mexican Casserole

    Friday-Saturday: going out of town with my husband and no kids so I will be eating at nice restaurants for a change. :)

    Sunday: pot roast

    monday:pw chicken spaghetti (thanks for the book I LOVE it!)
    tuesday: cauliflower soup and bread (didn't make last week)
    wednesday:enchiladas
    thursday: quesadillas
    friday:easy
    saturday: easy
    sunday: we had pork roast with sweet potatoes

    Monday: Chicken tetrazzinni and feta spinach salad.
    Tuesday: pork chops and baked sweet potato fries
    Wednesday: beans and rice
    Thursday: cauliflower soup and bread
    Friday: Fake-Baked Ziti and salad
    Saturday: Crockpot Chicken tacos
    Sunday: Asian salad
