I can't believe it's Monday again already. I'm finally posting the recipe for some delish cinnamon rolls. I just have to figure out my menu first and then I'll post it. Here goes.
Monday: tacos
Tuesday: spaghetti
Wednesday: BBQ beef sandwiches
Thursday: stuffed shells
Friday: pepper steak w/rice
Saturday: easy night
Sunday: meatball sandwiches

All right, now for the cinnamon roll recipe. This is from my sister-in-law, Annelisa, and they are yummy!
Cinnamon Rolls
recipe from Annelisa
1 1/2 c. milk
1/2 c. butter (I've used 4 or 5 T. instead of the whole stick and it's worked out fine)
4 1/2 c. flour
1 tsp. salt
1/2 c. sugar
1 T. yeast
2 beaten eggs
Heat milk and butter to lukewarm and set aside. Combine flour, salt, sugar and yeast. Add eggs and milk and butter mixture. Mix well adding 1/2 c. more flour (or more if needed) to make a soft dough. Knead until elastic. Let rise until double.
Divide in half. Roll in rectangle and cover with 3/4 c. sugar, 6 T. melted butter, 1 T. cinnamon (I've used less butter, like 4 T. and it's fine). Roll and cut into rolls. Let rise 1/2 hr. Bake at 350 degrees for 15-20 minutes.
Mix together powdered sugar, a little vanilla and enough milk to make a glaze. Pour over warm cinnamon rolls.
Enjoy! And have a good week.
