
We had a nice long weekend in Utah with family. We came home loaded up with freshly dug potatoes, dried apples, applesauce (that we canned this weekend), cucumbers, tomatoes, green peppers and a cooler full of beef. Thanks to my nice parents and in-laws for sharing their bounty.
After overeating while driving in the car for 9 hours twice over the weekend, I don't feel like eating much. I'm sure this feeling won't last long, so here's my menu for this week:
Monday: we were on the road -- no cooking!
Tuesday: End-of-Soccer-Season Pizza Party
Wednesday: Chicken soup with barley & lentils
Thursday: Broccoli Beef w/rice
Friday: Dave's birthday, steak and fried new potatoes
Saturday: easy night -- who knows what we'll eat?
