Happy Sunday! This week's menu was nice and easy to plan, since I don't have to worry about Friday through Sunday. It's nice to have a break from cooking every once in a while.
Here's my menu for the week:
Monday: my favorite taco soup (recipe below)
Tuesday: parmesan chicken and baked potatoes
Wednesday: chicken soup with lentils and barley, rolls or cornbread
Thursday: spaghetti with turkey meatballs
Fri -- Sun: not cookin', more about that later :)
My Favorite Taco Soup
Recipe from Cindy Burian
2 lbs ground beef (we like turkey better)
2-3 cloves garlic chopped
1 lg onion chopped
1 lg green bell pepper, seeded and chopped
1 can kidney beans with liquid
1 can pinto beans with liquid
1 can hominy or whole kernel corn with liquid
1 can stewed tomatoes (I get them with the Mexican seasonings)
1 small can green chilis
1 can Rotel
1 pkg dry taco seasoning
1 pkg ranch dressing mix
1-2 cups water (make as thick or thin as you like)
chili powder to taste
Toppings:
sour cream
crushed tortilla chips or frito chips
shredded cheddar cheese
In Dutch oven, brown meat, onion, bell pepper, and garlic. Add everything else. Simmer about 30 minutes. Serve with toppings.
