I'll post some more dinner recipes later. The kids and I made these bar cookies for our family night treat last night and I thought I'd share the recipe.
These are one of my childhood favorite treats. The page in my mom's recipe book that had this recipe is very dirty from all the times that I've made these cookies.
Congo Squares
2/3 c. melted butter (I substitute 3 T. of the butter with applesauce)
2 1/2 c. brown sugar
3 eggs
2 1/2 tsp. baking powder
1/2 tsp. salt
2 1/4 c. flour
1 tsp. vanilla
1/2 c. chocolate chips and nuts
Add sugar to melted butter. Cream. Add eggs one at a time. Add dry ingredients, chocolate chips and nuts. Spread in a 9x13 cake pan. Bake 30 minutes (or a little less depending on how cake-y you like them. I usually do about 25 minutes.) at 350.
