I'll post some more dinner recipes later. The kids and I made these bar cookies for our family night treat last night and I thought I'd share the recipe.

These are one of my childhood favorite treats. The page in my mom's recipe book that had this recipe is very dirty from all the times that I've made these cookies.

Congo Squares
2/3 c. melted butter (I substitute 3 T. of the butter with applesauce)
2 1/2 c. brown sugar
3 eggs
2 1/2 tsp. baking powder
1/2 tsp. salt
2 1/4 c. flour
1 tsp. vanilla
1/2 c. chocolate chips and nuts
Add sugar to melted butter. Cream. Add eggs one at a time. Add dry ingredients, chocolate chips and nuts. Spread in a 9x13 cake pan. Bake 30 minutes (or a little less depending on how cake-y you like them. I usually do about 25 minutes.) at 350.


  1. Here's mine. I like this idea, it is fun to have a place to put a menu other than paper scattered about.

    26th Tuesday: Barleycorn Muffins and Mexican Chicken & Beans
    27th Wednesday: Burritos
    28th Thursday: Sonoma Chicken Salad
    29th Friday: San Fran Pork Chops, Rice
    30th Saturday: Pizza
    31st Sunday: Fajitas
