Well, I'm back to menu planning. We came home yesterday after being evacuated for a week. I was very glad to be able to come home and to have a home to come home to. I'm so grateful for the firefighters that somehow kept the huge fire (over 127,000 acres) from swallowing up our little town. I'm also very thankful for all my friends and family that helped us and prayed for us and checked up on us while we were evacuated.
Here's a picture that I snapped of some of the fires still burning as we came into town. So sad that pretty much all the surrounding mountains are burned. Bring on the rain!
All right, now I need to do some menu planning:
Yesterday (Monday): we had pancakes (not very 4th of Julyish, but oh well)
Tuesday: tonight we had sweet and sour meatballs, rice
Wednesday: creamy chicken taquitos
Thursday: either grilled pizza or sandwiches on homemade french bread
Friday: grilled bbq caesar chicken
Saturday: lasagna (from freezer), 1 hour breadsticks
Sunday: try Easy Chicken Cordon Bleu or French Dip Sandwiches
That's what I'm making this week (unless my house is really hot like it is right now, then I'm not cooking). How about you? What are you making this week?
