Pumpkin Apple Muffins

I made these muffins yesterday for an afternoon school snack for my kids and their friends that they had over for play dates.  They loved them and so did I.  We ate them for breakfast this morning too. This recipe is pretty similar to the applesauce muffins that I love from Jessica Seinfield's Deceptively Delicious cookbook .  I got this recipe from  Two Peas and Their Pod .  I added a few things that I had on hand that I thought would be yummy.  And luckily, the muffins turned out great with my additions.  (I added a little flaxseed, a handful of oats, and 1/2 c. of buttermilk .)

Applesauce Muffins

I've been making these delicious applesauce muffins from Jessica Seinfield's cookbook, Deceptively Delicious , for several years.  I love them.  I recently tried adding pumpkin instead of the butternut squash puree and they were still delicious and pumpkin-ey.  I'm just going to post a link to this recipe since I don't really like posting recipes out of published cookbooks. 

Cornbread Muffins

I posted my favorite recipe for cornbread muffins on my blog a long time ago , but thought it deserve it's own post.  (It's sharing a post with my one of my favorite dinners, white chili.  I've switched up this cornbread recipe a bit by using wheat flour and buttermilk.  These are perfect to serve with your Halloween chili. Cornbread Muffins recipe from my friend Kendy, but modified a bit by me 1 c. cornmeal 1 c. flour ( I use half wheat, half white ) 1/2 c. sugar ( or you can use 1/3 c.) 1 T. baking powder 1 tsp. salt 1/4 c. oil ( I use 2 T. applesauce and 2 T. oil ) 1 egg 1 c. milk (or buttermilk ) Mix and pour into either greased muffin tins or small cake pan. Bake at 350 for 20 minutes (for muffins) or 30 minutes (for cornbread in a pan).

"To Die For Blueberry Muffins"

Happy Valentine's Day everyone! This morning I made these yummy muffins. I'd never made blueberry muffins from scratch before, I usually just use a box. But, a few years ago I had these at my sister's house and they were delish! Bluberries were on sale for $1/package yesterday, so I thought I'd give these muffins a try. You can find the recipe on allrecipes, click here . I did some of my usual substitutions and substituted half of the oil for applesauce. And when I made the crumb topping I only used 2 T. butter and I didn't even use all the topping -- it made a lot. So, give these muffins a try and let me know if you liked them too.

Banana Nut Muffins

My friend, Natalie, made these muffins the other day. They were so good! I got the recipe from her and made some tonight. The original recipe is found here on Allrecipes. Here is my version of the recipe (since I can't seem to follow a recipe). My favorite part of the muffin is the little cinnamon/sugar/crunchy walnuts on the top. I usually don't bake with nuts, but these are yummy! Banana Nut Muffins 3/4 c. wheat flour 3/4 c. white flour 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 3 bananas, mashed 2/3 c. white sugar 1 egg 1/2 tsp. vanilla 2 T. applesauce 3 T. melted butter Mix flours, baking powder and soda, and salt together. In separate bowl mix banana, sugar, egg, vanilla, applesauce and butter. Add dry ingredients. Stir until just mixed. Scoop into lined or greased muffin tins (makes 12 regular size muffins). Mix 1 T. melted butter, 1 T. sugar (either white or brown), 1/2 tsp. cinnamon and 1/3 c. walnuts. Sprinkle coated nuts on top of unbake...
