Honey Garlic Chicken and Roasted Veggies

Oh my goodness, I hope you like this dish as much I have.  Super yummy chicken and roasted potatoes and broccoli drizzled in a sweet and flavorful sauce all baked up in one pan (so there are hardly any dishes!!!).  So good!

I've made this dish twice this week.  I made it on Tuesday for a church dinner.  However I underestimated the time that it needed to bake, especially since my oven was full with two roasting pans in it.  Things turned out okay, not fabulous though...I had to crank my oven up as high as it would go so I didn't show up at the dinner with crunchy potatoes.  Instead, I showed up with not-quite-as-soft-as-they-should-be potatoes.  Turns out almost everyone else that brought chicken, potatoes and broccoli had the same problem as me.  We survived.  I was kind of embarrassed though.

I made a few mistakes that I learned from.  One of my mistakes was only looking at the baking time on the original recipe and not leaving myself enough baking time before the meeting started, obviously 25 minutes was not enough time.  I gave myself an hour of baking time but ended up baking it for 1.5 hours since I had triple the recipe in my oven. The second mistake was using disposable aluminum pans to bake it in, which seemed to make things bake SLOWER and not as hot.  Using a real pan makes everything actually roast and not just turn to mush.

I made this for dinner tonight in a 9x13 pan and it worked out so much better!  My only mistake was that I didn't bake enough chicken.  It was gone in a flash!  Next time I'll use a cookie sheet and not layer the chicken and veggies.  I'm excited to make it again!

I was pumped when I realized that this dish is gluten free!  Yay!  I'm always looking for gluten free recipes so I can have my celiac friends over.  And it would be perfect to take to a friend who had just had a baby or is sick.  They could cook it when they're ready to eat or just take it to them hot out of the oven.  AND, it's super easy to prep in advance and cook at dinner time.  I actually prepped my dinner the night before and then baked it at dinnertime.

5 out of my 6 family members like it, but the one that didn't is the one that doesn't like anything with flavor.  He requested that I rinse his chicken and broccoli off so it wouldn't have extra taste to it.  I'll definitely be making it again.

Honey Garlic Chicken and Roasted Veggies

Ingredients
  • 3 tablespoon olive oil, divided
  • 2 tablespoon butter, melted
  • 2 tablespoon honey
  • 2 tablespoon brown sugar
  • 1 tablespoon Dijon mustard
  • 3 cloves garlic, minced
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  •  salt and black pepper, to taste
  • 16 ounces red potatoes, cut into bite size pieces
  • 3 boneless skinless chicken breasts
  • 16 ounces broccoli **
Cooking Directions

  1. Preheat oven to 400 degrees. Prepare large baking sheet (like a cookie sheet) with cooking spray or parchment paper.
  2. Whisk sauce ingredients together (1 T. olive oil, butter, honey, brown sugar, mustard, garlic, basil and oregano, salt and pepper to taste) until well mixed.
  3. In large bowl combine lightly toss potatoes with 2 T. olive oil and lots of salt and pepper. Then spread potatoes onto baking sheet into a single layer.
  4. Butterfly chicken breasts or cut them in half so they are half the original thickness and place on cookie sheet in between the potatoes. Brush each chicken breasts with sauce mixture, using all the sauce.
  5. Bake for at least 40 minutes or until chicken is cooked through and potatoes are roasted. Toss potatoes to cover them with sauce and reposition them on the pan so they are in a single layer.
  6. Toss broccoli florets with a little olive oil and lots of salt and pepper and place on baking sheet, mixing it around so it gets sauce on it. Roast for at least 10 more minutes, checking occasionally and stirring if needed to prevent broccoli from burning. Bake until the broccoli is as you desire (some like it baked longer than others do).
  7. If desired, broil for 2-3 minutes until sauce is caramelized and broccoli is slightly charred.
***I've used fresh and frozen broccoli. Both work just fine, but frozen broccoli doesn't need to be cooked quite as long. I thawed it first by running some water over the frozen broccoli in a colander and than patted it dry.

I have a smallish, one story house and if I cook food that is kind of smelly, like onions, the smell tends to linger in every room.  This is a pet peeve of mine and (also my husband's).  Over the years I've found a few ways to cook smelly food without smelling up the kitchen. Use your garage!   I use my garage quite often to cook things in.  I open the window and it airs out, especially when you open the garage door.  I'm sure my neighbors wonder what I'm cooking. I've used two different kitchen appliances in the garage:  my crockpot and my food dehydrator. Crockpot - I did this very thing today since I'm simmering chicken, onions, carrots and celery to make chicken noodle soup tonight.  I don't want my house to smell like onions all day, so I plugged it in on my husband's workbench.   Food dehydrator - when I make jerky, I plug the food dehydrator in in the garage.  I don't really want my house to smell like meat for hours

The Best French Bread I've Ever Made

This is the best french bread I've ever made.  I got this recipe from my friend, Nikki, who gave us some of this bread as a thank you for my hubby helping them move a piano.  I remember it being delicious and we gobbled it up fast.  I was intimidated for some reason by the recipe and waited a few years before I made it. We needed some bread for to make some turkey, provolone, avocado sandwiches, so I made some of this bread and it was perfect!  We sliced one loaf like they do at Subway.  Then later I made normal shaped sandwiches with the rest of the bread.  Delicious... light and fluffy and yummy!
