A Little Sweet & Salty Granola

Mmm...this granola is heavenly!  I've been waiting to share it with you for a month now.  I wanted to share my recipe for homemade maple syrup with you first, because I used it in this granola recipe.  I finally posted the syrup recipe, so now we can talk about granola!
I've made other granola recipes before, like this one which is full of 5 grains, wheat germ, nuts and fruit, but this recipe is by far my favorite.  Maybe it's the macadamia nuts.  Or the sweetness of the syrup.  Or the little bit of saltiness mixed with the sweetness.  It's kind of a treat, like eating a cookie for breakfast (without the guilt).

We made fruit/yogurt parfaits and topped it with this granola.  Heavenly!  

I think I need to make some more of this soon.  Maybe today.



A Little Sweet & Salty Granola

  • 6 cups old fashioned rolled oats
  • 1 tsp. kosher salt
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 3/4 c. olive oil
  • 3/4 c. maple syrup (pure or my homemade recipe)
  • 1 1/2 tsp. vanilla
  • 1 1/2 c. coconut (either sweetened or unsweetened works)
  • 1/2 c. macadamia nuts
  • 1 c. chopped almonds
  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine the oats, salt, cinnamon and nutmeg.
  3. In a separate bowl, whisk together the olive oil, maple syrup and vanilla. Set aside 2 tablespoons of the mixture.
  4. Stir the large portion of the oil mixture into the oats, coating evenly.
  5. Divide the granola onto two large baking sheets that are greased or lined with parchment paper.
  6. Bake for 20 minutes, stirring occasionally and rotating the baking sheets halfway through the baking time.
  7. Toss the nuts and coconut with the reserved oil mixture.
  8. Add the nut mixture to the granola mixture and bake another 7 minutes.
  9. Remove from the oven and let cool (so you don't burn your tongue if you snitch a taste).

Week 394 Menu

Hi there!  This week is flying by!  So excited that we've been having blue skies and warmer weather.  Our snow is almost all melted and little bulbs are sprouting in the flower beds.  However, we had our 10th snow/ice day last week!!!  Hopefully it was the last one. Life has been busy, busy and I need to plan out the rest of our week's menus, even though it's already Thursday.  Here's what we've eaten so far and what I'm planning: Monday:  chicken stirfry, rice/quinoa Tuesday: breakfast for dinner Wednesday: flatbread pizzas Thursday:  roasted butternut squash, pasta, chicken sausage Friday: tacos Saturday: leftovers Sunday: pot roast, mashed potatoes, one hour rolls Alrighty, that's what we're eating this week.  How about you?  What's on your menu this week?  Feel free to share.  I love it when you do! Don't like your house to smell like food? I've got a kitchen tip for that!

I have a smallish, one story house and if I cook food that is kind of smelly, like onions, the smell tends to linger in every room.  This is a pet peeve of mine and (also my husband's).  Over the years I've found a few ways to cook smelly food without smelling up the kitchen. Use your garage!   I use my garage quite often to cook things in.  I open the window and it airs out, especially when you open the garage door.  I'm sure my neighbors wonder what I'm cooking. I've used two different kitchen appliances in the garage:  my crockpot and my food dehydrator. Crockpot - I did this very thing today since I'm simmering chicken, onions, carrots and celery to make chicken noodle soup tonight.  I don't want my house to smell like onions all day, so I plugged it in on my husband's workbench.   Food dehydrator - when I make jerky, I plug the food dehydrator in in the garage.  I don't really want my house to smell like meat for hours
