Week 50 Menu and BBQ Chicken Pizza

This week I made some really yummy BBQ chicken pizza. My family gobbled it up and we fought over the leftovers. No one even commented on the spinach and tomatoes in it (it was chopped up really small). I'll post the recipe after I post my menu for the week.

Wow, this is my 50th time posting my weekly menu! I've been doing this for over a year now. I've really enjoyed having my menus all planned out and it's made making dinner (and grocery shopping) a little easier.

Monday: Chicken Salad in Soft Wraps

Tuesday: Rich & Creamy Pasta Bake

Wednesday: My last freezer meal given to me when I had the baby, 1 hour Breadsticks

Thursday: Chicken Avocado Sandwiches on fresh bread

Friday: try Tamale Griddle Cake tacos (thanks Maggie!)

Saturday: easy night (maybe I'll use up the extra honey-lime enchiladas I froze two weeks ago -- yum!)

Sunday: Crockpot black bean salsa chicken (maybe I'll try making some corn tortillas)

I guess I'll need to mix up what I have on which night so we don't have pasta two nights in a row and mexican the next three nights. Oh well. We'll see what happens. Now it's your turn to post your menu! And finally...here's the pizza recipe.

BBQ Chicken Pizza

Crust Recipe (or use your own -- this one comes from the Food Nanny Cookbook):

Mix together and let sit for 10 minutes:
1 T. yeast
1 c. warm water
2 T. olive oil
1 T. honey

Add and knead:
1/2 tsp. salt
3 c. flour (more or less as needed)

Roll out pizza dough onto pizza stone (I love my pampered chef pizza stone -- makes great crust!) The dough will rise a little while you prepare the toppings.

BBQ Chicken Topping:

2 T. ranch dressing
2 T. BBQ sauce (I used Sweet Baby Rays)
1 chicken breast, cooked and shredded
2 or 3 slices turkey bacon, chopped and fried
2 T. chopped red onion
1/2 tomato, chopped
1 c. spinach leaves, chopped finely
BBQ sauce (1/4 - 1/2 c.)
monterey jack cheese

Spread ranch dressing and BBQ sauce on prepared pizza crust. In a bowl mix together shredded chicken, turkey bacon, red onion, tomato and spinach. Add BBQ sauce (using as much as you think looks good) and mix. Spread chicken mixture onto pizza crust. Top with shredded monterey jack cheese.

Bake at 425 for 15 minutes.

Don't like your house to smell like food? I've got a kitchen tip for that!

I have a smallish, one story house and if I cook food that is kind of smelly, like onions, the smell tends to linger in every room.  This is a pet peeve of mine and (also my husband's).  Over the years I've found a few ways to cook smelly food without smelling up the kitchen. Use your garage!   I use my garage quite often to cook things in.  I open the window and it airs out, especially when you open the garage door.  I'm sure my neighbors wonder what I'm cooking. I've used two different kitchen appliances in the garage:  my crockpot and my food dehydrator. Crockpot - I did this very thing today since I'm simmering chicken, onions, carrots and celery to make chicken noodle soup tonight.  I don't want my house to smell like onions all day, so I plugged it in on my husband's workbench.   Food dehydrator - when I make jerky, I plug the food dehydrator in in the garage.  I don't really want my house to smell like meat for hours

The Best French Bread I've Ever Made

This is the best french bread I've ever made.  I got this recipe from my friend, Nikki, who gave us some of this bread as a thank you for my hubby helping them move a piano.  I remember it being delicious and we gobbled it up fast.  I was intimidated for some reason by the recipe and waited a few years before I made it. We needed some bread for to make some turkey, provolone, avocado sandwiches, so I made some of this bread and it was perfect!  We sliced one loaf like they do at Subway.  Then later I made normal shaped sandwiches with the rest of the bread.  Delicious... light and fluffy and yummy!
