Week 22 Menu and Bread Recipe

Here's my menu for this week:

Now for my bread recipe...Never mind the not-so-lovely picture of my loaf of bread, but I wanted to share my bread recipe. We only have one grocery store here and I haven't been able to find any bread that we really like that isn't really dry or really expensive. So, since we've been living here I've been making bread every week. I only bake one loaf and freeze the other loaves to bake later on in the week. My family only likes to eat it within a day or two of being baked.

Mom's White Bread
I got this recipe from my mom. We would make it every week growing up. The full recipe makes 5 loaves. I usually 1/3 the recipe to make 2 loaves, or 1/2 the recipe to make 3 loaves. Substitute as much wheat flour as you'd like instead of the white flour. I usually use 1 c. wheat (when I 1/3 the recipe) since that's how my family likes it.

Heat in microwave on high for 4 minutes:
3 c. milk
1/4 c. butter (or shortening)
Mix and add:
1/2 c . sugar
2 c. cold water
1 1/2 T. salt
Add:
5 c. flour
1 1/2 T. instant yeast
Add:
7 c. flour

Knead on high for 5 minutes. (I use my kitchenaid with dough hook. I've also used my bread machine to mix it.) Spray large bowl with non-stick cooking spray and set dough inside bowl.

Let raise 1 1/2 hours. Then punch down.

Let raise 40 more minutes. Punch down.

If you have time you can let it raise another 20 minutes. Punch down.

Form into 5 loaves and put in bread pans. Let rise until dough reaches top of pan. Bake at 350 for 30 minutes.

If you are going to freeze some loaves, then cover them with plastic wrap and freeze (don't let them rise in the pan). Sometimes I put the frozen dough in the fridge when I go to bed and when I wake up in the morning it is ready to bake. Or let raise on counter until dough reaches top of pan (6 hours or so).

Don't like your house to smell like food? I've got a kitchen tip for that!

I have a smallish, one story house and if I cook food that is kind of smelly, like onions, the smell tends to linger in every room.  This is a pet peeve of mine and (also my husband's).  Over the years I've found a few ways to cook smelly food without smelling up the kitchen. Use your garage!   I use my garage quite often to cook things in.  I open the window and it airs out, especially when you open the garage door.  I'm sure my neighbors wonder what I'm cooking. I've used two different kitchen appliances in the garage:  my crockpot and my food dehydrator. Crockpot - I did this very thing today since I'm simmering chicken, onions, carrots and celery to make chicken noodle soup tonight.  I don't want my house to smell like onions all day, so I plugged it in on my husband's workbench.   Food dehydrator - when I make jerky, I plug the food dehydrator in in the garage.  I don't really want my house to smell like meat for hours

The Best French Bread I've Ever Made

This is the best french bread I've ever made.  I got this recipe from my friend, Nikki, who gave us some of this bread as a thank you for my hubby helping them move a piano.  I remember it being delicious and we gobbled it up fast.  I was intimidated for some reason by the recipe and waited a few years before I made it. We needed some bread for to make some turkey, provolone, avocado sandwiches, so I made some of this bread and it was perfect!  We sliced one loaf like they do at Subway.  Then later I made normal shaped sandwiches with the rest of the bread.  Delicious... light and fluffy and yummy!
